The procedure for cooking

When going for an exotic recipe like this, try being as much honest to the instructions given below as possible.

For the potato filling

  • Boil some salted water in a big pot. Now add the potatoes to this before covering and boiling again. The resulting potatoes should be tender. Discard the water when done.
  • Place oil reserved for potato filling in one large skillet placed over medium flame. To this, add pepper, salt, turmeric, mustard, chiles and ginger. Fry the contents for some minutes until fragrances appear while stirring constantly. Now add the radish greens. Continue to sauté and stir for about 3 more minutes.
  • Fill out the potatoes with the vegetable mixture and spices. Continue to scrape lime juice, cilantro, and scallions.
  • Transfer to the fridge.

For the potato balls

  • Grab a little bowl and whisk egg in it. Combine cayenne, pepper, coriander, salt and breadcrumbs in a slightly bigger bowl.
  • Use your hands to make balls with the potato filling. Ensure that the size is not larger than a teaspoon.
  • Give each ball a dip into the whisked egg and roll in breadcrumbs to cover thoroughly. Preserve them in a plate.
  • Grab a medium-sized saucepan and add the oil to it, about 2 inches from the bottom. Heat the saucepan to about 375 degrees Fahrenheit. Add the potato balls to this oil.
  • Fry the balls until they appear golden brown and cooked through. This should take nearly 3 minutes. Do not forget to turn the balls over once.
  • Transfer the fried balls to a plate.

For the coriander chutney

  • Blend together sugar, pepper, salt, jalapeno, garlic, lime juice and cilantro in a food processor. Blitz into a paste.
  • You can add more water or lime juice. Look into spices according to the taste.
