Mexican Rice Recipe

Mexican food makes its way across the border into the hearts of people. The cuisine is something one cannot resist. When it comes to spices, nothing comes close to the authenticity of Mexican food. It is no surprise that Mexico has given us a lot from its platter that includes an abundance of exotic and succulent recipes. The recipe we would discuss in this write-up is Mexican Rice. You might have come across the delicacy of your favorite exotic restaurant and might we say that you have fallen in love with it. This recipe makes its way from the Mexican cuisine onto your dinner plates in a total time of about 45 minutes. The yield you will get out of the recipe being discussed here would be enough to serve about 6 to 8 people. 

The things that will be required 

Mexico is not for assorted recipes. As a result, there is a slightly long list of items that need to be prepared before you can go on to make this recipe. The list is given as follows: 

  • Juice out of 2 limes 
  • Some lime wedges for garnishing 
  • ¼ cup of cilantro, finely chopped 
  • About 5 cloves of garlic, pressed 
  • About  2 peppers, preferably Serrano or jalapeno 
  • 2 cups of white rice, long-grained 
  • 1/3 cup of cooking oil, neutral 
  • ½ teaspoon of cumin, ground 
  • 1 and half teaspoons of kosher salt 
  • 2 cups of chicken stock 
  • A medium-sized onion, roughly chopped 
  • A can of whole tomatoes, peeled 

When these items are ready, proceed further. 

The procedure for cooking 

This recipe is slightly intricate, so you are advised to keep in mind that you need to stick to the instructions that are given below: 

  • Use a blender to puree onion and tomatoes together until they form a smooth mixture. 
  • Scoop up two cups from this mixture and pour into a saucepan. 
  • Now add cumin, salt and chicken stock as you boil the mixture over a medium flame. 
  • Heat some oil in an oven with medium heat. 
  • Add rice to the sizzling oil and continue to stir until they appear golden. This should take about 10 minutes. 
  • Now add the peppers as you continue to cook for another 2 minutes. Then add the garlic to the contents and give another 30 seconds to cooking. 
  • Bring back the tomato mixture and add it over rice while stirring to mix them together. 
  • Bring down the heat and cover the contents. The liquid would evaporate in another 15 minutes. 
  • Take the pot off the heat and stir the rice. Now allow a sitting time of about 10 minutes. 
  • Garnish the end product with lime juice and cilantro.
